KONA COWBOY COFFEE RUB

I was bored the other day, my computer was down, and I decided to watch a cooking show that I had DVR’d.  They were talking about all kinds of rubs to put on meats to add exotic flavors before cooking.  Well, that got me thinking that there’s nothing more exotic than 100% Kona coffee and since I make PANIOLA 100% Kona Cowboy Coffee why not an exotic Kona Cowboy Coffee Rub?  So here it is.

Start with 2/3 cup of PANIOLA 100% Kona Cowboy Coffee.  I used the pre-ground package that we make ‘cause, well, you’ll see.  Then get a half-cup of brown sugar, packed down.  Just pat it.  Next, two tablespoons of coarse salt.  Kosher salt is perfect.  Now, pour it all into a food processor and grind it up.  Actually, if you use ground coffee you can just mix it up.  Now just rub it onto and into a nice steak and you’re all set.  Let the steak sit for a half hour and then grill away!  Ono!  As we say in Kona.

REALLY CRAPPY COFFEE

I posted this information last August but there's been an upsurge in interest about this mostly fraudulent "coffee" and people have been mentioning it so I'm going to repeat it.  Whenever we do a trade show, someone is bound to jokingly ask about “that coffee that comes from a monkey’s …”  So, I grin and bear it, explaining to them that it’s not a monkey and, no, we don’t have it.  Then I came across this item from Erin Meister, who trains baristas and inspires coffee-driven people for Counter Culture Coffee:
          “Sure it's "exotic," this Pacific Island coffee that's processed by being digested and, ahem, excreted by a cat-like cutie called a civet (which is what the luwak means, kopi being "coffee"). The beans are harvested from the feces, washed (obviously), and, typically, roasted before leaving its country or source of origin, usually in fancy-seeming vacuum-sealed packs or encased in some other elaborate packaging that just reeks of "fancy coffee."
          “That's not all that reeks, however: Many of the civet coffee on the market is from farms where the animals are force-fed coffee cherry and kept in cages too small for them to turn around. Beyond that, regardless of their animal instinct to eat ripe fruit, the cat-like creatures can't always be counted on to eat the highest quality of coffee, and the animals' and plants' health, environmental conditions, and other myriad dubious factors pretty much guarantee that the only sure thing you'll get with an order of kopi luwak is a crock of, well...”

GLOBAL COFFEE SHORTAGE

Don’t panic.  We don’t buy coffee from Brazil.  But, for example, usually during this time of year, the delicate Arabica coffee plants in the mountains of Brazil, where most of the world's coffee comes from, are maturing. White, fragrant flowers have appeared, followed by cherry-like fruit, each containing two seeds: Arabica coffee beans, the most popular in the world.

But last month, the worst drought in decades hit Brazil's coffee belt region, destroying crop yields and causing the price of coffee to shoot up by more than 50 percent so far this year. The drought is historic, with more than 140 cities in Brazil forced to ration water. The country's leading newspapers reported that some neighborhoods are receiving water only every three days.

For now, retail prices for coffee are stable. Roasters typically have enough supplies to cover themselves for a few months. But if the price of the Arabica beans continues to rise, consumers could start seeing the cost of their morning coffee creep up later this year, according to Jack Scoville, a futures market analyst specializing in grains and coffee, among other commodities.

COFFEE AND CHOCOLATE

I’ve always said that nothing goes together better than cowboys and coffee.  Well, nothing TASTES better together than coffee and chocolate!  Here’s a recipe for a Kona Coffee and Chocolate sauce that will wow you!

You’re going to need a third of a cup of strongly brewed PANIOLA 100% Kona Cowboy Coffee, two ounces of unsweetened chocolate, half a cup of granulated sugar, three tablespoons of unsalted butter and a quarter teaspoon of vanilla extract.  Got ‘em?

In a sauce pan, cook and stir the coffee and chocolate over low heat until melted.  Stir in the sugar and butter until dissolved.  Remove from heat and add the vanilla. 

That’s it.  Use it over ice cream.  As they say in Kona, it’s ono, brah!

COFFEE, WHAT’S IN A NAME?

I awoke early this morning pondering coffee.  I do that a lot.  I knew pretty much all the tropical places where coffee comes from and where coffee came from originally but I wondered about the word, COFFEE.  And then, after I had my morning cup of 100% Kona coffee, I remembered.  My brain runs on coffee. 

In case you wonder where the word coffee comes from here’s a quick primer.  The original Arabic description of coffee was “Qahhwat al-bun” or “wine of the bean.”  I think that says it all.  I’d like a cup of wine of the bean, please.   Alas, this rather long description was later shortened by the Arabs to the name, “qahwa.”  This Arabic name was then borrowed by the Turks, who called that wonderful elixir “kahve.”  Aha!  Starting to sound recognizable, huh?  The Dutch named it “koffie” and through the English, because they never seem to pronounce anything correctly, it became “coffee.”  At least the Brits didn’t put a “u” in it…like flavour.

COOKIN’ WITH COFFEE

Here’s a yummy Hawaiian Style Kona coffee recipe I found on a blog and you can try it with the kids.  It will take 10 minutes to prepare and 20 minutes to cook so give yourself a half hour. 

You’re going to need 2/3 cup brown sugar, 1/2 cup butter or margarine, 2 eggs, 1-1/2 Tbs. instant Kona Coffee*, 1/2 tsp. vanilla, 1-1/4 cups flour, 1/2 tsp. baking soda, 1 cup semi-sweet chocolate pieces and 3/4 cup chopped pecans.  *(I'll send you some Kona Instant Coffee if you go to the website and send me a message)

Ready to go?  Preheat your oven to 375 degrees F.  Grease an 8 inch square pan.  In a large bowl, using an electric mixer, cream the sugar and butter.  Now add eggs, instant coffee, and vanilla;  mix it really well.  Then sift the flour and baking soda;  mix into butter mixture.  Stir in the chocolate and pecans.  Pour into prepared pan.  Bake for 20 minutes.  Let it cool and cut into bars.  Makes 16 servings.  Get more at cookinghawaiianstyle.com

COFFEE QUENCHES THIRST

Drinking coffee keeps you just as hydrated as water, according to research reported by Jo Willey of the EXPRESS in the UK.  Coffee was thought to be less hydrating than water but new research has dispelled the myth.

Contrary to the belief that caffeinated coffee is dehydrating, experts now claim that drinking it in moderate amounts is virtually as good as drinking water by itself.
Dr Sophie Killer, a nutritionist at Birmingham University, said: “It is a common belief that coffee consumption can lead to dehydration and should be avoided, or reduced, in order to maintain a healthy fluid balance.
“Our research aimed to establish if regular coffee consumption, under normal living conditions, is detrimental to hydration status.  We found a moderate intake of coffee, four cups per day, in regular coffee-drinking males, caused no significant difference compared to the consumption of equal amounts of water.”
Dr Killer said health advice on coffee and dehydration should be updated.
